'Uonuma Koshihikari' from Niigata

This is Japan’s premier brand of rice, having been awarded the ‘Special A’ rating in taste rankings for over 30 years.
The most distinctive feature of Uonuma Koshihikari is its superior taste. In particular, its chewy, springy texture and refined sweetness are exquisite, allowing you to fully appreciate the rice’s natural umami.
The climate of the mountainous region, characterised by a significant temperature difference between day and night, suppresses the night-time breakdown of starch—which contributes to the rice’s umami—thereby producing delicious rice with excellent flavour. Furthermore, as the average temperature during the ripening period (from heading to harvest) in this region is close to 24°C—considered the optimal temperature for Koshihikari—the amylose content (which affects flavour) is lower, resulting in rice with greater stickiness. At Seida-san’s farm, high-quality rice is carefully selected based on years of expertise.
